In Valais, wheat was grown in climatically favorable locations. In rough locations, for example in Lötschental or Goms, this was not possible.
There are wheat varieties with awns (a kind of bristles on the ear) and those without awns. Among the Valais varieties of wheat, there are summer wheat (cultivation in spring, harvest in summer) and winter wheat (cultivation in autumn, harvest the following year in summer). Winter wheat usually gives more yield, as the plants have more time to develop.

In the genus wheat (Latin triticum) there are in addition to our normal wheat (soft wheat, Triticum sativa) spelled (Triticum spelta), emmer (Triticum dicoccum), spiny or dwarf wheat (Triticum compactum), einkorn (Triticum monococcum) Durum wheat (Triticum durum) and others.
